Vintage 2018
Vent d’Anges, special cuvée of the estate, was born from a selection of grapes, carefully harvested by hand, and chosen for their maturity. Aged on fine lees for 2 years, then 2 years in bottles, the wine is rich and unctuous.
Grape variety: 100 % Sauvignon Blanc
Age of the vines: on average 25 years old
Plot: Les Bascoins
Terroir: Terres Blanches
Work in the vineyard: HVE3 certification.
Soil tillage. Disbudding. Leaf removal according to the years.
Vinification: grapes are directly pressed in a pneumatic press, at low pressure.
Thermoregulated stainless steel tanks, vinification between 14°C (57°F) and 20°C (68°F) to preserve the aromatic potential.
Aging: No malolactic fermentation to keep the freshness, 24 months on fine lees, batonnage, and 24 months in bottle.

Tasting
Colour: gold with green reflections. Bright.
Nose: racy, after aeration the first mineral notes give way to notes of melon, fresh basil, with a touch of vanilla which brings a nice depth.
Palate: a full-bodied attack, with notes of ripe fruit, highlighted with a touch of black pepper.
Final: very good length in the mouth, a structured and powerful wine
Our advices
Pour not chilled but fresh, around 10°C – 50°F.
A wine for gastronomy. It goes well with cooked or roasted white meats, foie gras, fish in a cream sauce, and will work perfectly with a pastry of veal sweetbreads!
Ready to be tasted, but if you are patient in several years the wine will be so interested.
